December 4, 1954 - Insta-Burger King opened in Miami. It resembled McDonald's, but had significant features. The manner of preparing the dishes also stood out. The brand insisted on preserving the nutritional value of the burger beef while grilling it, without the use of oil. This indicated concern for the clients' health.

After 3 years, the company adds the original Whopper dish to the menu. The huge sandwich was instantly loved by visitors.

Since 1958, the brand has rapidly stepped into popularity. To reinforce the success of the business, the founders decide on an original marketing move - to shoot a promotional video about the company and the Whopper. For Burger King, this is not the only outlet on television; the brand regularly creates new advertisements and launches them for everyone to see.

Each new video significantly increases the company's rating. 1959 - a new restaurant opens in Florida, and then management decides to franchise. Franchises, in their opinion, are a budget option for expanding a chain of fast food restaurants. Indeed, it took only 8 years to open 274 establishments under the brand’s logo.

Burger King and the Pillsbury Corporation The next important step in the development of the brand is a change of owner. In 1967, Burger King became owned by the Pillsbury Corporation.

The purchase to the new owners cost $18 million. The change in ownership was followed by an accelerated pace of new restaurant openings. The brand management, busy selling franchises, practically forgot about quality and service. The consistency, identity of the atmosphere, and equal cost of products promised in the advertising video were not observed in all establishments of the network.

The company was on the verge of ruin. Donald Smith, a former McDonald's manager, managed to correct the situation.

But employees are prohibited from taking photographs, and they have no time for that. I'm lucky today. I was invited into the Burger King kitchen as part of a group of bloggers. So, any restaurant starts with warehouse space. In this one, in the photo, cheese, vegetables and sauces are stored at a temperature of about 2 degrees C. In exactly the same room, but at a temperature of -18 C, frozen semi-finished meat products and French fries are stored. We were there too, but it wasn’t interesting, everything was in cardboard boxes.

From the cold room, uncut products, such as onions, are taken to the cutting room and chopped. But most of the vegetables are already fully prepared.

The holy of holies of the Burger King restaurant is the grill machine. Frozen semi-finished meat products go into it, and hot, juicy, rosy burger patties come out. In the event of a machine breakdown, the standard time for a repair team to arrive and fix the problem is 1 hour. At this time, only deep-fried burgers are sold.

It's nice that only Russian-made meat is served! Semi-finished products are manufactured at a plant in the town of Odintsovo near Moscow.

Roasting occurs at a temperature of about 400 degrees Celsius. By quickly frying the surface of the meat over an open fire, juiciness is achieved, which distinguishes Burger King from other similar establishments.

Finished cutlets of various types go into heated cabinets and onto the table of the burger makers. Below in the trays are vegetables, cheese, bacon and sauce.

On the left is a toaster for toasting buns. Place a meat patty on the bottom of the bun, cheese on top and bake in the microwave, then add sauce and vegetables. The top is covered with the second half of the bun.

All you have to do is wrap it and the burger is ready.

It should be noted that employees work with bare hands, since it has been proven that less bacteria accumulate on cleanly washed hands than on latex gloves. Hand washing occurs as soon as it gets dirty, but at least once an hour. Hands are washed up to the elbows with soap using a special brush, followed by treatment with disinfectant gel. Surgeons use exactly the same gel before surgery.

At the end of February 2018, the ownership structure of the parent company for the Burger King chain in Russia, Burger King Russia (Cyprus) Ltd, changed, according to materials from the Cyprus registry of companies. The owner of 16.62% of the Russian business was Xomeric Holdings Ltd., a company registered in Cyprus. As a result of the transaction, Xomeric's share increased from 18.4 to 35.02%, and it is now the company's largest shareholder.

The seller of this package was the VTB structure - Golden Star Investment Limited, a company registered on the island of Guernsey (located in the English Channel, is the property of the British crown, but is not part of the UK) (belonging to the group follows from the latest list of affiliates of the state bank). VTB announced the upcoming transaction in its last published financial statements in February. “Last year we reached an agreement in principle to sell 16.62% of the shares [of the parent company of the Russian Burger King chain],” a bank representative explained two weeks ago. “This transaction has not been closed until now, but we plan to complete it in the near future.”

The VTB press service confirmed the “partial sale of a stake in the company.” “According to the current agreements, the pre-emptive right to repurchase shares is granted to current shareholders,” RBC’s interlocutor clarified. — We sold part of our stake in Burger King upon reaching our target IRR level (internal rate of return). — RBC) at 40% per annum."

After the deal with Xomeric, VTB owns 19.98% of Burger King Russia. The shares of other shareholders - the structure of the American Restaurant Brands International (owner of the Burger King brand), as well as Gladerom Investment Ltd, which is associated with the main owner of the Shokoladnitsa and Coffee House coffee shops Alexander Kolobov - remained unchanged, 15 and 30%, respectively.

When asked by RBC whether VTB plans to further reduce its stake in Burger King Russia, the financial group only noted that “as a financial investor in the Private Equity segment, we always have clear expectations in advance regarding the price parameters for exiting the asset.” “When they are achieved, we will consider the relevant proposals,” said a VTB representative.

Pancakes and burgers

Burger King Russia was created in 2012 as a joint venture between VTB Capital and Burger Rus LLC. The latter belonged to the co-owner of the Shokoladnitsa chain, Alexander Kolobov, and at the time of the transaction was the largest Burger King franchisee. The State Bank, as reported by the Vedomosti newspaper, promised to invest $100 million in the project over three years and received almost 50% for this. The share of the co-owners of the Shokoladnitsa chain, headed by Kolobov, has never been officially disclosed. Now the businessman, together with a VTB representative, are listed as directors at Burger King Russia.

Alexander Kolobov refused to comment on the latest changes in the ownership structure of the Russian Burger King.

The book value of the stake sold to VTB, as indicated in its financial statements, is equal to 4.6 billion rubles. Thus, the book value of Burger King’s entire Russian business, according to VTB, is almost 27.7 billion rubles. But, as a VTB representative clarified, the last deal to sell the stake was based on another business assessment (which the parties did not disclose).

As a VTB representative notes, at the time of the transaction, in 2012, Burger King operated 38 restaurants in Moscow and St. Petersburg, today - more than 550 restaurants in all regions of Russia and three CIS countries. “Almost 90% of the products in Burger King restaurants are made in Russia,” emphasizes a representative of the financial group. The network’s revenue in 2017 increased by 35%, to 29.1 billion rubles, net profit increased ninefold, to 900 million rubles.

Ukrainian bankers

Xomeric Holdings Ltd first appeared among the shareholders of eateries back in 2014, as follows from the Cyprus registry data. As the bank reported then, it sold 12.2% of the parent company to an unnamed “financial investor” for $25 million (about 965 million rubles at the average Central Bank exchange rate for that year).​

The new largest shareholder of Burger King in Russia is associated with the Ukrainian investment company ICU, as follows from ICU licensing documents and materials on its official website. The founder of Xomeric Holdings Ltd is CIS Opportunities Fund SPC Ltd, registered in the British Virgin Islands. ICU Investment Management Ltd, registered on the same islands, has a license to manage funds in the interests of CIS Opportunities Fund SPC Ltd. The license was issued by the Financial Services Commission of the British Virgin Islands, the document is published on the ICU website itself. It also lists the funds included in the group's structure and provides information about the CIS Opportunities Fund.

A representative of the ICU group refused to comment to RBC on the connection between the fund included in its structure and the Russian Burger King eateries. VTB also refused to comment on the structure of the “other shareholder” - Xomeric Holdings Ltd.

The main owners of the parent ICU Holdings Limited, as follows from the materials of the Ukrainian Avangard bank owned by the investment group, are Makar Pasenyuk and Konstantin Stetsenko.

Pasenyuk’s structures previously participated in the pre-sale preparation process for the Roshen confectionery factory, owned by the family of Ukrainian President Petro Poroshenko. The businessman reported this in an interview with Interfax-Ukraine in February. “The only contract that ICU carried out for the president [Poroshenko] was a joint project with Rothschild for the sale of Roshen, which ended for us in April 2016 after the asset was transferred to a blind trust,” Paseniuk specified.

Now, as Pasenyuk said in an interview, ICU has $500 million in assets under management.

Over the weekend I visited the kitchen, utility room and freezer of Burger King - a premium fast food chain, as they explained during the tour. I watched with interest how everything works from the inside, how burgers are prepared, potatoes are fried and cola is poured. From the usual view, most of the process is hidden by cash registers and a counter with ready-made products, but here was the opportunity to ask the boiling questions, and see from the inside with my own eyes. Let's say I was very intrigued by the fact that at Burger King they cook without gloves, and I received a comprehensive answer why they do it this way and not otherwise.

On the other side of the counter it turned out to be unusual - you are standing, and people come up opposite, make orders, look at you with a camera, a little, but not too much, in surprise. If I saw a group in sterile gowns and with DSLRs in fast food, I would probably be more amazed. Here the process goes on as usual, as if nothing was happening.

Burger King, like all fast food chains, has its own recognizable feature, its signature product - the so-called "Whoppers". This word, derived from the English Whopper (“whopper”), refers to very, very large burgers, some of which are much larger than the size of a human mouth, I believe. According to Wiki, the Whopper is one of the most recognizable hamburgers in the fast food industry. From time to time, Whoppers with non-standard flavors appear on the menu for variety.

The reason to gather bloggers was another addition to the menu - “Big King Extra” - also a rather large hamburger for a reasonable 85 rubles. I don’t know how the excursion began for the other bloggers who visited the kitchen that day, but being late (almost an hour, through the prayers of my beloved Russian Railways), I was immediately given one for tasting. Regular readers of my blog probably remember how I recently conducted a survey about where the most delicious burgers are, and you advised me to try them in a variety of chains. I liked the option at Burger King.

I spotted a recipe for this sandwich in the kitchen. On top there is a 4-inch “bun top” (I quote from here on out, and there will be a flow chart at the end of the post), then 7 grams of Big King sauce, underneath that is 14 grams of iceberg lettuce and 7 grams of onions. Then come two slices of pickled cucumbers. The whole thing is piled on top of a “burger patty” grilled over an open fire, which is placed on the middle section of at least a 4-inch bun. Under the middle part there is another “hamburger patty”, lying on a slice of cheese and seven grams of onion. The whole thing rests on 14 grams of iceberg lettuce, 14 grams of Big King sauce and the bottom of a 4-inch bun.

So, the whole burger comes together in a completely different order than I listed. And not even the opposite. Everything there is very cunning, as it turns out, and all sorts of machines take part in the process.

To see the cooking process, we were invited to the staff area. Here everyone changed into special gowns and shoe covers to comply with hygiene standards. We left all our outer clothing in the hall in advance, under the supervision of a security guard. We took with us only bags with lenses for DSLRs.

Through the refrigerator you can get into the freezer, where the temperature is maintained at -20 degrees:

The maximum allowable time that product can spend outside the freezer during the unloading process is 30 minutes. In practice, cars are unloaded much faster. In general, there are a lot of time restrictions at Burger King. For example, after frying, a cutlet should lie for no more than an hour in a special container that maintains the temperature. The same applies to all other products - if they are not used or consumed within the required time frame, they are thrown away. The canons of fast food mean that it is more expensive for you to risk expired products - the lawsuits in which case can be monstrous.

On the adjacent shelves, already outside the freezer, fresh herbs were found. Some products arrive at the warehouse uncut, others are fully prepared.

There are sauces nearby, and as I understand it, they are not frozen. Some sauces can be stored refrigerated, while others are specifically kept at room temperature. For example, mayonnaise sauce and ketchup are stored strictly in the refrigerator, as required by the recipe. The temperature in this room is -2 degrees, that is, it is a full-fledged refrigerator.

We moved to a warmer utility room. Drink cups and other disposable tableware, bottled water and teas, and buns (which come frozen and defrost at room temperature) are stored here. Of the sauces on the shelves, I noticed “barbecue” - apparently it does not require extreme refrigeration. Also, the burger sauce does not require refrigeration, which should be warm when the sandwich is assembled.

And this is a dishwasher, three-phase “according to the standard” - that is, in the first phase the dishes are soaked and stubborn dirt is removed, in the second they are washed with chemicals, and in the third they are rinsed. I also noticed in the photo that there was a disinfecting lamp hanging on the right; it didn’t catch my eye during the shooting:

Personnel who have access to products are required to wash their hands using a special system. We were clearly shown how this is done, when I upload the video I will show you. Here's the secret of why Burger King doesn't use gloves.

It turned out, according to research, that a much larger number of bacteria accumulate under gloves than on hands that have been specially cleaned and it is more hygienic to work without gloves. To do this, wash your hands very seriously - first thoroughly and using a brush with a special gel, which is washed off with running water. They wash not only the palms, but the entire area up to the elbows, as in surgery.

Then a special chemical composition is applied to the hands and thoroughly rubbed into the skin up to the elbows. As they explained to us, this is a disinfectant cream used in medicine. As a result, after such powerful processing, products can be safely touched with bare hands.

Of course, there is not enough treatment for an entire shift, and according to the standard, hands are washed as they become dirty, but at least once an hour. Hygiene is a critical thing for fast food chains.

But there are many more steps required before it gets to the assembly shown in the frame above. It all starts with frozen cutlets, which must pass through the crucible of a grill with an open fire. There is practically a conveyor belt here - frozen records are placed on top and, one at a time, gradually fed through the flame. Open fire grill "know-how" Burger King, due to this frying, a greater juiciness of the cutlet is achieved.

The cutlets are made from Russian products in Odintsovo and fried at a temperature of about 400 degrees. Inside it looks something like this:

Below, under the grill, the cutlets fall into special containers with handles. After the container has been filled with a certain number of cutlets, it is removed from the grill pan and transferred to a special thermal cabinet, where a stable temperature is maintained at just over 100 degrees:

In this cabinet, with electronic notes “where is which cutlet,” the product may not remain forever. If my memory serves me correctly, the limit is 60 minutes, and there is a color indication - if the meat begins to approach the limit, a special light comes on, calling for attention. If the time limit is passed, then the tray with cutlets goes into the trash. I don’t know if this happens in fast food, where a whole system of issuing popular items to the buyer has been developed in practice.

The cabinets themselves are installed above the “assembly line”, where all manipulations with the burgers are carried out. At the top you can see the prescription plates. When the first cutlets appear in the oven container, it comes to the buns. Some of them are defrosted in a warehouse with a reduced temperature, and then transferred in pallets to the burger conveyor hall:

What comes out of it is a soft but nicely browned bun:

Buns come in two-sections, three-sections, and are divided by “inches” - I already wrote above that “Big King Extra” requires the top, middle and bottom parts of a 4-inch bun. Right before my eyes they began to assemble one of the burgers:

Note that the greens were placed on the top of the bun first. The one closest to you in the frame is the bottom one, and first they placed two cutlets on it, and then a piece of cheese. I have always wondered how it is that some of the ingredients on a burger are cold and some are hot. If you heat a finished burger in the microwave, the result is completely and significantly worse in taste than what you get at Burger King.

The point here is that only part of the food is heated; a significant part of the burger (salad, sauces) is not subjected to heat treatment. When you heat up a whole burger in a microwave, you basically can’t achieve this effect; besides, the bread loses moisture and quickly becomes dull and tasteless.

Then hot cutlets are placed on the browned lower part, from the very cabinet where the temperature is maintained, and cheese is placed on top:

After which the lower part of the burger goes into a special oven, where the cheese is melted. Everything is strictly on a timer, in conveyor mode. While part of the burger sits there, the cook works on the top element, finishing it with tomatoes.

Now let's see how everything happens using the example of a completely different burger model. Since the process is generally similar, I will not comment on each step.

Let me draw your attention to one point - the top part of the bun is spread with a special sauce, using a special tool. This is something like mayonnaise, as I understand it:

Where did the second bun go? Of course it went into the oven to melt the cheese. Moreover, I noticed that in addition to cheese, there was also bacon on it. It is also heated and browned while the ingredients are placed on top:

To put it in a special tray, buyers can already see it from the reverse side. Everything is logical here - burgers are sorted by type, there are inscriptions like “gam”, “double cheese”, “cheese” - we all understand perfectly well what they mean.

Lastly about potatoes. I noticed an oven with a timer. I waited a long time for time to run out...

At this time, the potatoes were bubbling inside. As soon as the timer reached zero and the stove beeped, the container was removed and hung so that the oil would drain. As explained, the oil in these furnaces changes as it oxidizes, and this is determined instrumentally. That is, as soon as the oil no longer meets the standard, it is replaced with a new one. As a rule, draining occurs after a shift, because this procedure is “dirty”, and hot oil is not the easiest substance to use.
